We had leftover chili with nachos. We still have yellow tomatoes and all sorts of peppers in our garden so I made salsa. The 10 year old called it TDF Salsa (To Die For Salsa). Gotta love that kid!

I haven't posted to this thread in a while, but if you're looking for a pretty easy/quick side that's something different from the same old same old, DH and I enjoyed this last week. I hadn't made it in forever and it really hit the spot. The boys don't like it but whatever.

It actually ended up being pretty delicious. Tonight I'm pulling pasta fagioli out of the freezer. It's a good day for soup. It's been good for me to clean out freezer/pantry but now I'm sad b/c our freezer meals are almost gone I've got one more bag of soup, a pan of enchiladas, and some entree-only stuff (carnitas and Italian drip beef and smoked turkey) but no more whole-meal stock. Which means I have to actually start cooking again. Le sigh. Soon I should be able to wear DD on my back and then that will be a game-changer.
