Re: What's your favorite egg pan?
my small cast iron is fairly new to me so maybe I just need to keep seasoning and trying (though I have no issues with the little egg skillet I do use) I wish our stove had an even surface we keep trying to adjust it but nothing seems to really help.

Re: What's your favorite egg pan?
Yea, could be. It took some time for this pan to be seasoned as well as it is now.

So does anyone not use cast iron?

Re: What's your favorite egg pan?
I meant anyone else. I looked at those bialetti pans, and I might try one when my current non-stick skillet is ready to be replaced.

Re: What's your favorite egg pan?
I don't, but I don't think I've ever tried it. I use cast iron for lots of other things, though.

Re: What's your favorite egg pan?
I use a small cast iron skillet for my eggs every morning. I don't have a problem with my eggs sticking but everyone else does. After watching them all I have learned why, they mess with the eggs too much and too soon. I always start with a good pat of butter and medium heat. Once the butter is melted I drop my eggs in, season them, break the yolk and let them sit for a bit. After they are mostly cooked on the underside I flip them and then scramble them up. If any sticks it is just a small bit that is easily peeled off. Every one else is always wanting to scramble them as soon as they hit the pan and they end up with more egg stuck to the pan than on their plate.

Re: What's your favorite egg pan?
I use a wide, cheap, thin, Teflon pan. I use very low temperature and don't have problems with uneven heating. The thinness would be important for kids cleaning as it's easy for little wrists to handle.
I cook at such a low temp that I don't even worry when little ones get too close. It takes forever and has to be stirred and scraped often. It's that thin layer of foamy opaqueness that does any of the cooking at all and the uncooked eggs run into that spot when that layer gets scraped and set aside in a pile. My seven year old loves to do it or I do it while I do dishes. The yolks come out so creamy and not too mixed in, like the scrambled version of 68 deg. eggs and you don't have to deal with runny whites. We call them stirred eggs. I say go cheap on the pan and replace as often as needed.

Of course, getting my eggs perfect in my cast iron still doesn't solve my kids dealing with the pan issue.

Re: What's your favorite egg pan?
I make fried eggs in cast iron pans (I have those mini ones that are perfect for two eggs) but I usually do scrambled eggs in my All-Clad stainless steel pan - in copious amounts of butter.
I beat eggs together first with a little bit of milk or water and some seasoning and cook over medium heat, not stirring too soon. (I shake the pan instead.) I like to get big curds of scrambled eggs.
