Charla, a gf pizza crust that's "not too bad" is worth knowing about. Share the recipe? Tonight I think I'll make spaghetti with meat sauce and roasted veggies. Spaghetti squash instead of pasta for me, on the side for anyone else who wants it. Last night was quick pepperoni pizzas using the frozen crusts from Trader Joe's, regular and gf.

I patted it piece by piece onto my pizza pan. I pre-baked the crust for about 10 mins in a 400 degree oven before adding any toppings. Then because I baked two large pizzas, I bake them for 10 mins and then switch racks in oven and bake for 8 mins more. I would say the crust is kind of like a dense biscuit texture. But it is much more palatable than any I've eaten so far. Save

Had my parents and in laws over for dinner. We had chicken veggie soup and spinach salad. Super easy in the ip (bone broth from scratch), super healthy and easy to feed the whole crew!

I assigned my 13 year old daughter to meal planning and dinner prep yesterday. The only restriction was that it had to include a veggie.
She made fettucine alfredo with raw veggies and dip on the side.

went super quick and easy for dinner tonight. Used up a variety of things i had on hand. it's a skillet dish with hamburger, thickened slightly with broth and spices, mixed frozen veggies, and leftover spaghetti squash. Served over rice for the kids and zucchini noodles with fresh diced compari tomatoes for the adults with finer palates.
This is also a part of my "use up existing food resources" challenge from another thread. So double win!
