Wonderful vegan chickpea burgers
Mmm, these are so good! I adapted the recipe from the BBC program, You Are What You Eat She puts them on a diet that is almost vegan. It is dairy and egg free, but it has some fish. Most days are vegan though.
Anyways, here's the recipe: Chickpea Burgers Makes 20 Ingredients: 1 can chickpeas, drained and rinsed 1 can red kidney beans, drained and rinsed 1 carrot, trimmed, peeled, and finely grated 1 small onion, peeled and finely grated (I just chopped it) 1/2 c. hulled sunflower seeds 2 tbsp. tahini, drained of any excess oil before measuring 1 garlic clove, peeled and chopped 1 handful chopped fresh cilantro 1 tbsp wheat free vegetable bouillon powder Preheat the oven to 425. Place all of the ingredients in a food processor and blend 5-10 seconds or until the mixture is fairly coarse. Push the mixture down with a spatula and blend for another 10 seconds. Remove the blades of the food processor, wet your hands with cold water, and shape the mixture into 20 small balls. Line a large baking tray with wax paper and put the balls on the tray. Flatten each ball slightly with the back of a spoon. Bake for 15-18 minutes until lightly browned. Remove from the oven and let them rest before serving
