week 2 of March Eating up Veg style
Well, tonight we actually rented a movie at redbox because it wasn't scary to spend a 1.30 on something so frivilous. We had tater tots and floats for dinner to celebrate. Breakfasts instant oatmeal muffins mixed berry smoothies toast Lunch Mac and cheese chickpea pb or almond butter and jelly broccolli salad Dinner pasta and red sauce corndogs...my Grandma bought is a corn dog maker. So, we are going to give it a go this week. Wish us luck grilled pepperjack daiya sandwiches or quesidillas and tomato soup green curry tofu and rice ramen and veggies I have a bunch of potatoes and sweet potatoes to use up, too

Thank you. Threads like this help me so much. I'm just started on this journey and hearing what other people eat each week helps me to plan since my repertoire is small.
I made quiche while my dad was working since I knew he wouldn't eat it this week. And migas last night. Even the die-hard meat eater seemed to like that. I'm thinking grilled cheese tonight. |

I have made some sort of crockpot grains, mostly oats but also some buckwheat and quinoa, every day this week. With apples, coconut, and cinnamon. Yum.
Last night I made a lentil-mushroom-pasta bake with vegan cheese sauce (cashew and nutritional yeast base). I thought it was reminiscent of a Hamburger Helper type thing, but not bad. The kids loved it! We had a plain green salad on the side. Dinner tonight will probably be Chana Masala (sour chickpeas), sweet potatoes, and broccoli. I am loving my new cookbook, Appetite for Reduction, by Isa Chandra Moskowitz. I finally bought it after checking it out from the library several times and renewing as much as I could. |
