Sunday - DH cooked penne and meat sauce. I ate some chicken noodle soup MIL sent over.
Tonight - leftovers or instant pot salmon and potatoes with sautéed kale, spinach, and chard. DD’s and I eat salmon. The guys do not.

Taco bar tonight.
I ended up making this Pho instead of the IP version. (It called for an 8qt IP. Mine are both 6qt and I couldn't fit in all the ingredients! ) It was good. Not amazing, but good enough to make again. I had leftover brisket from making the Pho and made Caramelized Vietnamese Shredded beef for dinner Saturday with the leftovers. It was delicious! (Even though I used a fraction of the sugar called for.) It used up all the leftover condiments and veggies from the Pho, too. DH made homemade pizza on Sunday, but I'm doing a GF trial for myself and ended up having yogurt.

DH is working until midnight all week and I am not motivated to cook every night.
So last night we had cheesy crockpot chicken and bell peppers. Tonight we will have leftovers of that

Thursday- Orange chicken over rice with stir fry veggies and mandarin oranges Tonight- sheet pan sausage, potato and sauerkraut dinner Tomorrow night - Swiss and mushroom burgers, oven fries, baked beans Sunday- crock pot roast, mashed potatoes, carrots, green beans
