Homemade pizza - homemade dough, homemade pizza sauce, pepperoni, mozzarella, green pepper, black and green olives, mushrooms and feta cheese
I may make a salad as well - possibly romaine and iceberg with Parmesan and red wine vinegar vinaigrette with Italian spices.

Friday night we had grilled whitefish with pesto, roasted sweet potatoes and salads.
Saturday was DH's company picnic, and we ate at a restaurant afterwards. Fancy pizza: white sauce with bacon, apples and red onion. It was delicious. Last night we had carnitas--I had the meat and black bean ragout in the freezer, and made cilantro-lime slaw, tomatillo salsa (usually have that in the freezer but we were out) and guacamole. I had been hungry for guac--hadn't had it in quite a while and my friend's recipe for it is the BEST. Blueberry cornmeal cake for dessert, but I'm SO frustrated with that recipe. It just absolutely does not work with frozen blueberries, and 99% of the time that's what I have available. I'm not sure what I'm doing tonight. I had planned zucchini lasagna, but we need to eat leftover pizza and leftover carnitas. But meanwhile all the produce for z. lasagna is in my fridge and going to go bad...

Saturday we had corn chowder, fresh baguettes from the market, and sliced apples. Sunday night was crockpot Thai red curry beef.
Not sure about tonight. I didn't realize DH would be working late and I'm not sure I'll get the kids to eat the green chile corn casserole I was planning. I may just cook pink eyed peas and serve it with carrot sticks and salad. Sent from my iPhone using Tapatalk

I made my first every batch of navy beans from scratch (from dry) over the weekend. I am shocked at how SIMPLE it is!
Today I am making a rice and beans casserole for the kids. Dh and I will eat roasted cabbage and chicken. Watermelon and grapes on the side for all!

Saturday - chili cheese dogs with the rest of the leftover chili. Coleslaw on the side.
Sunday - crockpot pork chops and "gravy" with rice Monday - homemade macaroni and cheese with chicken, coleslaw on the side

Yesterday we had one-pot lemon and herb chicken and rice with beets on the side. Tonight I think we will have pile-on, a family tradition, of seasoned ground beef, macaroni pasta, corn piled high and smothered in cheddar cheese and a seasoned tomato sauce.

I did freeze beans in bags to get multiple uses. Do you use the liquid that they cooked in for anything? I read that it's full of nutrients and it looked and smelled delicious so I froze that too. Figured it's essentially a vegetarian broth and would be good to use any place I use a broth in recipes (or to use as the liquid when cooking rice).
