Easy Vegan Minnestrone

This is pretty much the best soup ever. Because of the pasta and the chickpeas it really is a complete meal and carnivores will happily gobble it up.

Minestrone

4c organic vegetable broth
15oz can of tomato sauce
15oz can chick peas, rinsed
1 large celery stalk
1 med carrot, sliced thin
4 new potatoes (or 1 large regular), cubed
1 med zucchini, diced
1/4 cup chopped parsley
1/2 cup uncooked whole wheat macaroni
1/4 tsp pepper
dash cayenne pepper
1/8 tsp celery seed
2 tsp olive oil
1 med onion, chopped
1 clove garlic
1 tsp basil
1/2 tsp marjoram
1/4 tsp thyme

~In large pot combine olive oil, onion, garlic and 3 tbsp vegetable stock. cook until onion is tender.

~Add the rest of the stock, tomato sauce, chick peas, celery, carrots, potatoes, zucchini, herbs and pepper. mix well, cover, bring to boil and simmer for 15 minutes.

~Bring to a boil again and add pasta. simmer 15-20 minutes stirring occasionally.
