Thanks for posting this. One of the families we've invited to DD's birthday party is vegan and I've been freaking out as to what to do about cake. What a relief!!

This cake is AWESOME. It's our favorite cake, now. It's inexpensive and super easy to make, too. We served it at Gracie's birthday party along with a "regular" birthday cake from the bakery and everyone loved this cake the best! Word of caution--don't over bake it. It tastes best when it's really moist. Mine fell a little in the middle while cooling, but it tasted great. The next time I baked it longer so it wouldn't fall and it was a little dry . . .
