Default Yummy Vanilla Brown Rice Pudding

I started making this when I was pregnant with Jake and now I'm making it again as my favourite dairy-free dessert(baby can't have dairy but soy is okay). You can use regular milk (I've done it with skim milk) but it's great with soy.


~875 mL So Good Original(or Vanilla) Fortified Soy Beverage 3 ½ cups
~175 mL brown rice ¾ cup
~1 vanilla bean (if you must, you can use 2 tsp vanilla extract)
~80 mL brown sugar 1/3 cup
~30 mL raisins 2 Tbsp
~45 mL dried cranberries 3 Tbsp


1. In a medium saucepan, stir together soy beverage and the rice.

2. Split the vanilla bean pod lengthwise, and scrape out the seeds. Add the seeds and pod to the saucepan.

3. Bring the mixture to a boil, then cover, reduce heat to medium/low and simmer. Stir occasionally. Cook until the rice is tender, approximately 60 minutes.

4. Once the rice is tender remove the pod, stir in the brown sugar, raisins, and dried cranberries.

5. Stir until it becomes creamy in consistency. Let sit covered for 15 minutes. Don’t be tempted to skip the “15 minutes rest time”, it will be much more creamy if you follow this step! Stir once more and serve warm.

Tip:If there are any leftovers (which there won't be), store in the fridge for up to 3 days – add more soy beverage to the pudding and reheat in the microwave.

how would coconut milk be? I'vebeen wanting to try rice pudding AND use up the can of coconut milk I bought for some reason.

ok, I'm using a coconut milk/goat's milk combo. I'll try to remember to let you know how it turns out. I've got it on the stove right now.

It turned out great! Very yummy, and my goats milk/coconut milk coimbo worked great--it taste just like milk. I am totally going to make this all the time! I think it would make a nice breakfast too.

Glad you liked it . Definately good for breakfast. I usually will double the recipe, have it for dessert one night and then my toddler and I will have it for breakfast the next morning. Then I'll eat the rest throughout the day and swear I'm never making it again
