Yesterday we had grilled salmon with roasted vegetables and potatoes.

Tonight I have chicken quarters defrosting. So it will be baked chicken quarters and some variations of sides. I will probably make mashed sweet potatoes for the kids since the chicken will render enough liquid to make some gravy.

Saturday and Sunday were pulled pork with slaw. I had some take out chicken noodle soup because I'm sick.

Tonight is homemade pizza with sautéed spinach.

last night we had my best friend over for her birthday and made homemade steak fries, grilled asparagus and butter basted rib-eyes with thyme-rosemary. It was my first time making a SERIOUSLY AMAZING steak... and we used this method... oh my word, I think we're hooked

Yesterday was meatball burgers. I seasoned ground beef with onion powder, garlic powder, basil, oregano, parsley, salt, and pepper, and added chopped frozen bell peppers and shredded Romano cheese to make the burgers. Then I topped them with Sargento shredded 6-cheese Italian blend. I browned the inside of the buns in a combo of olive oil and some of the grease from the burgers. The boys had broccoli on the side, DH and I had salads.
