Normally it doesn't have a side. Just served over rice or tortilla chips.

YES...we top everything possible at our house with shredded cheese and sour cream.

You really could play with this adding more things like black olives, caramelized onions, jalapeņos, just up to your taste.

This is my easy, no thinking, dump recipe....it is more about eating than nutrition or being creative.

[b]Betty's Cheesy Chicken Bake I guess this is a Betty Crocker recipe? It's been passed to me from my aunt, from someone else.

4-6 chicken breasts (thawed)
4-6 slices swiss cheese
1 can cream chicken soup
1/3 cup white cooking sherry/wine (optional)
Half of a regular sized bag herb stuffing (uncooked)
1 stick melted butter

Chicken breasts in baking dish. Salt the breasts (optional).Lay one slice cheese on each breast. Mix the soup and sherry, spread over chicken and cheese. Sprinkle stuffing over all (may need the whole bag if you use 6 large chicken breasts). Melt butter and pour over the whole thing. Bake at 350 for....i dunno, until I cut one open and it's not raw. (I think it's about 40 - 45 minutes depending on thickness of your chicken. It's usually done if it's bubbling all around the edges.)

I like lots of gooey stuffing, so I use more than some people may. You can just sprinkle a light layer of the stuffing over the top for a little crunch and herbiness.

My mom has done the same recipe in her crock pot (she used cream of mushroom instead) on high for 4-5 hours.

I like to serve this with micro-steamed sugar snap peas or a salad, and herbed rice (one of the instant quick-cook pre-seasoned packages).

[b]Any kind of pasta/meat/sauce bake with cheese on top
I love this for leftover cooked pasta. Or fresh.

Half package of any kind of pasta, cooked.
1 jar pasta sauce (red or white) or home-made sauce
1 lb any kind of cooked meat (we use ground beef or chicken chunks....it would be good with italian sausage or ground turkey. Not sure about seafood, but it might be really good with shrimp.)
1 cup Italian blend cheese (shredded)

Layer in baking pan: pasta, sauce mixed with cooked meat, cheese. Bake for 20 min. on 350, or until cheese is melted.

These are my two quickest "real meals". I have other quickies that are more snack-y (like tuna melt quesadillas, mac-n-cheesie-weenies, blackened tilapia.)

I have found that pretty much anything I can cook without reading a recipe becomes a 30 minute or less meal (unless it involves lots of chopping/peeling.)

a new one we did a few wks ago and everybody loved it! (thats saying a lot)

6 boneless chicken breasts
16 oz jar of black been and corn salsa
lotsa shredded cheese (we used mexican blend)
1 can of black beans and/or corn extra is optional, ive done it both with and without and its just as good but makes more food w/ less cost)

layer on salsa, lay the chicken, layer black bean (can skip step if you want to, layer cheese, layer corn (again, skip if you want), layer salsa, layer cheese....takes about 10min to prep, 30ish to cook
serve with rice is what weve done...you could probably put in some instant rice on bottom and add a bit to cook time to make it a full casserole

this is what i was going to add, but i don't use cream cheese just a little shredded on top.

sometimes i serve it with rice - white or spanish. or shred it in the crockpot and serve it in a warm tortilla with some chips and quacamole. YUM!!! one of my favorites!!!


another easy - pasta

anykind of pasta
jar of sauce
italian sausage, browned and crumbled

this is usually served with garlic bread (whatever bread is available - in particular heals or leftover buns - spread with butter and a little garlic powder/salt
and sauteed zuccinni/yellow squash. slice squash/zuc put in hot pan with a little oil, sprinkle with salt and pepper and garlic. sautee until smells good and looks a little mooshy.

also. i'm learning to marinate my meat in the freezer as it comes home from the store usually in bulk. think dream dinners. its SOO easy to pull a bag of 3/4 or 6 servings already marinated and thaw and then just look through whatever sides we have available. veggies and salad or starch.

Recipe #1
Chicken Curry with Coconut Milk
little oil
medium onion, thinly sliced (i used onion flakes)
red pepper, thinly sliced (i omit)
1 lb ground chicken, crumbled
2 tsp curry powder
1/8 tsp ground cayenne pepper
can coconut milk
1/2 cup frozen peas (could use more)

cook onion and pepper in oil for 1 minute. add chicken and cook until brown and cooked through. add curry powder and cayenne. cook 30 seconds. add coconut milk and peas simmer 1 minute or until thickened (couple minutes for me). stir in 1/4 cup chopped fresh cilantro.

recipe #2
chicken quesadillas with mock guacamole.

i cook cubed chicken with a bit of grill seasoning (dh says grill seasoning is my house seasoning ) then add a can of diced chilies (4oz can - which i put through food processor, because i don't like the chunks) and just a bit (maybe 1/2 to 1 tsp) liquid smoke. i then assemble - tortilla, chicken, cheese, tortilla and bake until cheese is melted. mock guacamole - 2 cups frozen peas - thawed, 1 cup canned white beans drained, 2 cloves minced garlic, 2 tsp lime juice (lemon juice works), 1 tsp ground cumin. mash or process to desired consistency. stir in 1/4 cup fresh cilantro and salt and pepper to taste.

My quick family favs are:

Salmon Patties:

2 packages of salmon (next to the tuna in the grocery)
10 saltime crackers crumbled
2 pieces of bread shredded
1 egg

Put all this in a bowl and mix really well, form into small patties (my kids love tiny ones for fun) and roll in yellow corn meal. Cook in a 1/2 inch oil until golden brown, We serve with organic fries or tater tots or sometimes I make my own homestyle fries and salad!! So fast and yummy and easy to double or triple for larger groups.

Terriaky (sp?) Beef

1 large bottle of terriaky (sp?) sauce
1 lb of stir fry beef (cut in small strips)
1 red and green bell pepper sliced
1 can of pinapple cut up
1 purple or white onion

Put terriaky sauce and beef in crock pot all day. Save 1/4 of terriaky sauce and just before serving saute the cut up veggies in the terriaky sauce on high heat until just cooked and still a little crunchy! Serve the beef and veggie over brown rice! SOOOOOO YUMMY and SOOOOO FAST!

Here are my two faves, but you have to like bell peppers and my husband and kids don't.

Papaya black beans and rice
2 tsp olive oil
1 cup red onion chopped
1/2 cup orange juice
1/4 cup lemon juice
2tbsp cilantro, I usually just put some on top and don't measure it
1/2 tsp cayenne pepper/ I usually don't add this, but we don't do a lot of hot things
1 cup red bell pepper finely chopped
1 cup green bell pepper finely chopped
1 medium papaya, peeled, seeded, and diced
2 garlic cloves minced
2 15 oz can black beans, rinced and drained
6 cups hot cooked brown rice/ I usually only add 4 cups of rice

Heat oil in large skillet over medium heat. add all ingredients except beans and rice. Cook for 5 minutes, stirring occasionally until bell peppers are crisp-tender. stir in beans. cook about 5 minutes or until heated through. Serve over rice.


Black bean salad with corn
1/4 cup apricot preserves
3 tbs lime juice
1 tbs olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp chilli powder
1 cup cooked corn kernels, cooled
1/2 small head iceberg lettuce about 2 cups torn/ I cheat and use shredded lettuce from the store
1 medium red bell pepper diced
1 16 oz can black beans, drained and rinsed
1 15 oz can lima or butter beans, drained and rinsed
1 jalapeno chile pepper seeded, finely chopped. / also don't use this. found it to be way to spicy
1tbs cilantro
tortilla chips

In lrg bowl whisk the preserves, lime juice, olive oil, salt, pepper, and chilli powder. Add corn lettuce, bell pepper, black beans, lima or butter beans, chile pepper, and cilantro. Toss lightly to blend and serve over tortilla chips.
