Oven baked pork chops, mashed potatoes, steamed broccoli, and Cole slaw. I'm trying to do Sunday dinners. We had the whole family minus ds16 (at work) plus dd18's boyfriend.

DH is trying to diet so I'm trying to support him with my meals. Tonight I made these Cauliflower Rice Balls (Arancini) and they were SOOO good! Both DH and DS said they were a 10 out of 10 for diet food, but still an 8 out of 10 for regular food (he said he had to leave room on the scale for all the steak and bacon in the world ). They were a little bit high maintenance to make, but I'll definitely do it again because they were so yummy. I tripled the recipe for my family of 5.

I used a recipe for one-pot spaghetti and made it gluten free. It didn't turn out very well with gluten free noodles. Weird texture. Kale and romaine caesar salad on the side.

I'm making muffin tin meatloaf and broccoli for dinner tonight.
Last night we had Buffalo chicken from the crock pot, "creamed" spinach, sauteed sugar snap peas, and focaccia. I think the two little ones ate only the focaccia dipped in olive oil and cheese. They had green on their plates, but I'm not sure how much of it got eaten, as opposed to pushed around.

Hectic evening yesterday so P picked up burrito bowls and guacamole for us.

My 12 year old found some old recipe books in my parents house and has taken a liking to cooking! Tonight she made meatloaf with mashed potatoes and gravy. She also made a batch of dinner rolls. I made some sauteed onion and collard greens for the veggie dish.
Homemade chocolate pudding for dessert (made by dd last night).

Tuesday we had tilapia and asparagus on the bbq grill and broccoli rice.
Wednesday we had bbq chicken and zucchini on the grill and gf mac n cheese. Tonight we had tacos, Mexican rice, black beans, and guacamole.
