Default Cleaning out my cupboards/fridge: What can I do with carrots and celery?

I have a HUGE bag of carrots and an average size bag of celery, must be cooked up tomorrow! What can I do besides vegetable soup?? We are *SO* burnt out on that right now. And, I don't need to cook them together- I can cook them separetly. I just need ideas!

I was thinking some sort of carrot muffin?

I love carrot muffins. I use a recipe out of Whole Foods for the Whole Family that uses 2 full cups of shredded carrots but I substitute chocolate chips instead of the boring ol' raisins the recipe calls for. Sooo yummy. Just about any zucchini bread recipe can be made with carrots, but it's yummier if you adjust the spices to be heavier on the cinnamon (and nutmeg and allspice too, maybe even cloves).

You could go ahead and do soup and freeze it for a time when you are less sick of it and don't want to cook. I like cream of celery soup (made with soymilk for my allergic child). I also put a fair bit of celery in my red beans and rice.

Man, I would make stock or extra soup but we have one of those mini fridge/freezers so we have NO room to store things. GAHHH drives me crazy!

Carrot muffins is what I'll do and I love the choco chip idea! Iarwain, do you have a recipe by chance? And celery soup sounds good! Do you have that recipe too? LOL

The very bad news (upsetting to me too!) is that I seem to have LOST the page of my cookbook with the carrot spice muffins on it! It's on page 20 of WFWF if someone else has it...

The cream of celery soup is:

Leaves, ends and trimmings from 1 bunch celery, chopped (I added in some stalks too - the premise of the recipe is that you can use the stalks for snacks and the leftover bits to make this soup but I prefer a bigger batch of soup.)
1 sm. onion, chopped
1/2 c. water
2 c. thin white sauce (which can be made with milk substitute if necessary)

Put celery, onion and water in pan and bring to boil. Simmer until veg is tender. Puree then add water to bring the volume up to 2 c. Stir in white sauce and bring back just to a boil then thin with more milk or milk substitute if necessary. If you have more than 2 c. of celery puree then add an equal amount of additional white sauce.

Do you have a juicer? I *love* making "mock tuna salad" with carrot pulp. I juice the carrots to drink, and then I take the pulp - which has the same texture as tuna - and add my favorite raw, almond-based mayo to it, wrap in huge lettuce leaves, and enjoy! You can also use a store bought vegan mayo, or regular mayo, if you're just veg.

Christa, I don't have a juicer...I have a vitamix though?

But I was thinking, that maybe I could just shred the carrots and do the same thing basically?

Wow, that sounds so good!

I make ants on a log with my celery, and carrot sticks and dip with my carrots.

I also do ginger honey carrots- slice into coins, boil, drizzle with butter, honey, and ginger. So yummy it could be dessert!

I have a good carrot spice muffin recipe too- freezes well. It's on the Birthing Naturally website, which is not loading for me right now, or I'd link you.

Thank you! I did find that Calliope has that recipe so I'm going to try that one. I can't wait! They sound great.

I'm also going to try to shred my carrots and do something like Huggabugga suggested. We'll see how it turns out!

My mom makes carrot salad. It's just shredded carrots, raisins, and mayo. People always love the stuff. I grew up with it though and always thought it was strange. But, when she makes it there is never any left.

I love celery and it never lasts around here. Cream cheese mixed with some pineapple is a tasty filling.
