I think we're having black bean burritos today - another recipe from a GCMer, from one of these threads a few months ago. I need to plan some kind of side to have with it, though, which may involve going shopping as I don't think we have much in Maybe salad and wedges?

Last night was a beef and cauli rice dish from the THM book plus roasted green beans.
Tonight is scrambled eggs and fruit because I'm out of mental energy for dinner, plus Dh takes one kid to a late afternoon appointment. School started this week but next week activities start and it's overwhelming. I have no problem with sandwiches!

Yes, I do: Crockpot Sesame Chicken. I use it as a freezer meal so I combine the chicken and sauce ingredients and put in a freezer bag and freeze. I add the cornstarch, cilantro, red pepper, and sesame seeds on the day I cook it. It is one of dd's favorites.

tonight was coconut chicken curry -- using my homemade bone broth, and my homegrown heirloom tomatoes. Served over rice or zucchini strips (zucchini from my garden).

Eldest DS has decided he ("read "we) need to get healthier so he has asked to cook some meals etc. Last night we had Kale salad with beets, wild rice and chicken. It actually was very nice and so we have leftovers for lunch today
Of course I had to modify it for the youngest DS as he has textural issues and won't eat salad so I just made him some veggies to go with his chicken and rice. Tonight is capsicums stuffed with cauliflower rice, mince with grated cheese. If we can make them and hide the cauliflower rice from DS #2 it could go down okay. If not, will just leave the cauliflower rice out.
