Vegan Carrot Muffins/Cupcakes for Easter!

I had a request for this recipe when I mentioned it elsewhere so here it is - from "The Farm Vegetarian Cookbook"

Your oven goes to 350 first
Mix in one bowl:
1 C oil (not olive)
2 C sugar - can be half brown/half white or all brown, I suppose you could use succanat, I can't ever afford it so I never have
1 and 1/2 C milk alternative or can use water in a pinch

In your second bowl, sift together:
4 C flour (I have used whole wheat PASTRY flour or plain white if your family doesn't dig whole wheat)
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 ans 1/2 tsp cinnamon
1/2 tsp allspice

Combine both bowls, then add to THAT (you will need a pretty big bowl by the time you're done)
3 C grated carrots (raw, duh)
1 C nuts (which the cookbook says are optional, but I think it would be kinda dense and boring without them)
1/2 C raisins (ditto the above)

Cookbook says this makes 3 round layer cakes, baked at 350 for 35-40 min, but when I did it that way they were too done on the outside before the middle set, so that's why I started doing it in muffin pans - jumbo muffin pans work really well, at 350 for 20? 25? min? (Sorry, timing is always "iffy" for me as I have never had a properly working oven :/)

These are soooo yum...fatty and sugary yes, but sooooo yum...

I've made this carrot cake. The Farm cookbook is one of my favorites! What a nice idea making it as muffins or cupcakes for Easter!
