Quick, cheap vegan meals?
If anyone has any recipes that fit the above category, I would love if you could share!

Beans and Rice can be made into all kinds of thing. I cook a bag of beans in my crockpot. Use for burritos, tacos (I buy the large thing of corn tortillas and fry myself), enchilada casserole, soups, chili... Chili can be eaten as is or used to top potatoes or pasta. Top it with cornbread for Tamale Pie. I buy Tofu at Trader Joes or Asia shops. Bake with your favorite sauce...Teriyaki, Curry, Barbecue. Serve as a main dish and serve any leftovers in tortillas for lunches or snacks the next day. Tofu can be scrambled. I like to add a little Pico Pica (or salsa if you don't have that in your area) and maybe some onions or something. You can add turmeric for color. Serve in corn tortillas with coleslaw, cilantro, and avocado. Homemade pizza. Toppings can be expensive, but if you do it weekly you can freeze some toppings (like veg pepperoni) or stock up when they are on sale. Olives, pineapple, pesto (the kind in the tube is Vegan), veg meats, Lightlife sausage that has been saute in a little oil and crumbled, nates meatballs cut in half (you don't need many for a pizza), I like to watch this Youtube video for inspiration http://es. youtube.com/watch?v=KwMGgAjxkNA (it's a broken link because of the music)... Make a big batch of pizza dough. You can feel it with other leftovers and make little calzones or roll it like cinnamon rolls. My kids love refriend beans and salsa OR I'll just put some pizza stuff and let them dip in spaghetti sauce. Add healthy side dishes to meals...like frozen veggies, sliced apples, cut up oranges, carrots and celery. Big pots of soups made from a mix of stuff from around the kitchen. I don't use broth just water to cover the veggies and braggs to taste.

Stir fry - you can get bags of frozen stir-fry veggies for about $2. Start a pot of rice. Saute veggies in a bit of oil. When heated though, add sauce - I wisk together oil, braggs, garlic, crushed red pepper, and a bit of sugar, with a bit of corn starch if the veggies gave off much water. You can add nuts or some tofu for extra protein.
Noodles with peanut sauce - I used ww spaghetti, and 'dress' with nut butter mixed with garlic, some oil, braggs, lemon juice, crushed red pepper and a bit of water to thin it out. You can add asuted veggies/tofu on top, too. |

Honestly with your first they don't eat much. I've got three starving boys to feed (well 4 if you count my husband).
