Default Chicken-free Chicken Salad (vegan)

I made this last night for a dinner party.

Two friends came over. All three of us really liked this. I made a triple batch, so I'll be eating it for lunch every day this week! (and breakfast and dinner lol)

I added carrots to it too.

We thought it was delicious!

We had three different crackers with it. I used rice crackers for one in case one of my friends with gluten free.


We had a salad with cucumbers as a side and raspberries, apples, and grapes.

Oh my gosh, this is amazing!!!!

I made it for lunch today (with liberal addition of pickle) and stuffed it into pocket bread. My kids LOVED it! I kid you not, I actually heard, "Thanks Mom for making this yummy lunch."

I considered asking for a DNA test right there to make sure they were really my kids, but I decided against it. With behavior like that, I don't mind keeping them around awhile even if they're not my kids.

I told my husband it was chicken salad. He said it was delicious!!!

I really meant to say, like chicken salad. Really!!!

I would mix all the ingredients before adding the chick peas. I also added carrots. My chick peas had that flakey texture until I mixed all the veggies into it. If I'd mixed the other i gredients well first and then folded chick peas in, I think they would have retained their texture.

Mommy love, I am thrilled to hear kids liked it!!

Oh Ive made an almost identical recipe but I use real mayo (since we are sometimes vegetarian, but not vegan!) - but ITA - chick peas make an awesome non-chicken salad. This is a great reminder I need to make it again!
