Pasta with Italian Chicken Sausage, Escarole and Beans was tonight. Spinach salad on the side with bacon and hard boiled egg, with the dressing from this recipe.

I got purple sweet potatoes and fresh spinach in my organic produce basket today. I have a really awesome split pea soup recipe that has sweet potatoes and spinach in it, so I just put that in the Instant Pot.

We had sour cream green chili chicken enchiladas, cilantro lime rice, lettuce and radish salad with homemade ranch dressing. Leftovers tonight!

We have a BBQ to go to after ds's game - its at 3:30, so that'll be our dinner.
I am bringing a veggie tray and cookies. The main dish will be bbq pork, which I won't eat, but there is always too much food at these events so Ill just do sides.

It is going to get in to the 90's this weekend. So all the meals are planed around not turning on the oven. Salid with pepperoni, develed eggs and other little bites, tuna fish and probably Mac and cheese because the children won't complain.

We're getting beautiful tomatoes, lovely cucumbers, and gobs of basil from our garden, so we had tomato and mozzarella sandwiches and mixed veggie cruditee for dinner tonight, plus hard-boiled eggs. Littlest made herself wontons in the microwave, though. That kid just.won't.eat anything I make. Unless it's sugary and non-chocolate.
Oh, and.........Secunda was toasting marshmallows this afternoon with a blowtorch to make s'mores because I apparently have been ignoring her dessert needs.

Ooooh, yum! You could make some caprese salad or skewers with balsamic vinegar drizzle with some of that stuff. Have you tried that before? It is sooooo good.

I am excited to be back in charge of menu planning after a few months of a schedule that didn't work for me to plan and cook dinner.
We are having steak, corn on the cob and watermelon tonight. Monday - Italian sausage with garlicky green beans and parmesan quinoa Tuesday - Chicken taco dip/salad Wednesday - ham steaks, mashed potatoes and cheesy brocolli Thursday - balsamic chicken penne and summer veggies Friday - pizza |

Absolutely! We eat Caprese salads until the tomatoes are done for the year. Yum! My kids will skewer pretty much anything, especially if it's to eat outside. They love to make "salads" with buoconcini (tiny mozz balls), cherry tomatoes, and sometimes peppers to take to picnics. We usually have basil oil to dip it in. (Garlic oil is good, too.) It's how I got Prima to eat veggies. (Before kids, I'd never have guessed just how many toothpicks, skewers, and cartoon band-aids I'd end up buying as a parent. )

Yesterday was modified muffaletta sandwhiches at the beach.
Tonight, I'm still working on that. . . It is already 80* here at 10am. Not a good sign. Might get over 90*. blech
