Jambalya (from sparkpeople!)
This is SO yummy I had to share. I got it off sparkpeople. It has 14.8 g Fat, 17.4 Carbs, 250.2 Calories and 11.9g Protein. A little high on the fat, but you can tweak it to make it less fatty.
2 tsp Sunflower Oil 1 C. Chopped/Sliced Italian Sausage 1 C. chopped onion 1/2 C. chopped green pepper 1/3 C chopped celery 1 garlic clove, crushed 1 1/2 C. uncooked long-grain white rice 2 10 oz cans chicken brother, plus 1 half can water 2 tsp paprika 1/2 tsp dried thyme 1 Tbsp chili powder 1 medium tomato, chopped pepper to taste Pour oil into large saucepan/wok and brown sausage. Drain oil, then add onions, bell pepper, and celery. Saute until tender, about 5 minutes. Stir in rice. Cook 2 minutes, stirring constantly. Add broth, paprika, thyme and chili powder. Bring to a boil. Cover, reduce heat to low and simmer 15 minutes. Add tomatoes, and cook uncovered until tender. Remove from heat and let stand 5 minutes before fluffing with a fork. Number of Servings: 6 I used kielbasa & olive oil instead. Omitted the browning sausage part and just sauteed the veggies and kielbasa together w/ a little olive oil. I put 2 C. rice in and 3 C. chicken broth (which I made w/ water & bouillon) and 1 C water. It was SO yummy!!
