Default Low carb veggie recipies

We always do a meatless friday before my diagnoisis I often did a pasta type dish or a rice based stir fry. I'm looking for some low carb veggie dishes that still over a decent protein as well.

I'm currently pretty much following the South Beach diet, so it's low carb, higher protein and lots of veggies. I'm also mostly vegetarian. A couple of the meals I have done:

- veggie and bean salad (can of black or white beans, tossed with a Tbsp of olive oil and 2 Tbsp balsamic vinegar and a tsp of cumin, with lots of diced celery and peppers. it's pretty too) I have served this for lunch for my family, and had bread on the side for my kids and DH, and some other sliced raw veggies too.

- I saute up some zucchini, peppers and tomatoes, with a spritz of spray oil, some minced garlic and a bit of basil and/or oregano. Then crumble in some soy burgers and toss on a handful of shredded mozza or parmesan cheese and let it melt. Kind of like a stir fry.

- Crustless quiche. I make these for breakfast a lot, but they work for supper too. For one serving, I either do 2 eggs or 1 egg and 2 egg whites (from the carton). Toss in a 1/2 cup of cottage cheese, a bunch of veggies (mushrooms - canned ones run through the food processor have a meaty texture, shredded zucchini, peppers, diced tomatoes, spinach, whatever I have on hand) and a bit of shredded cheese. Bake at 350 for 1/2 an hour in a greased dish. Great with a side salad.

try zucchini,spagetti or spagetti squash.. you can make "noodels" out of either than add all the spagetti fixings.
the zucchini you peel into noodels and fry, or steam.. the spagetti squash you cook in oven and just scrape out the spaggeti..

I've used zucchini or summer squash in place of pasta... IMO, its *okay*. soups (do they count as meatless even if you've made the stock w/meat), loaded salads... (what do I eat... lol) eggs (a million different ways), torinos low carb wraps are GREAT, veggie pizza- use a portabella slice for the crust & shredded zucchini for the cheese

eta: blended cauliflower makes a decent "rice", I also really like roasted cauliflower and mashed cauliflower (in place of mashed potatoes)

Sorry if you are looking for more specufic recipes my brain is tired and fried.

i just cooked cinnamon rolld
and i thought of you, not sure how much of a sweet tooth you have but i have a big one.
any how i fried 4 eggs in a pan, be real careful to flip it w/o breaking the circle. than plop it out on a plate. coat the eggs after they cool with a mixture of coconut oil honey and cinnamon. i did 1 ble spoon each than a few shakes of cinnaomon
than roll it up tight than cut it into 4 or 6 circles. turn the cirles flatwise and coat the tops with the remainder mixture. put the rolls in the freezer about 1 or 2 min to make the coconut oil freeze. the eggs stayed rolled up and you have a sweet high protien snack.
also the cinnamon helps control blood sugar as well as the coconut oil.. yummy

eta i know this is not what you asked for but i just specifically thought of you and did not know whear to put it so you would see it

Visiting my mom this weekend & had a few "a-ha" moments....

Bok choi or mustard greens sauteed with extra firm tofu, garlic, scallion & ginger
eggplant parm (you could even sub tofu for cheese)
fritattas (mostly veggies w/some eggs to hold them together)
grilled (or sauteed or broiled) veggies (summer squash, zucchini, onions, tomatos w/olive oil & garlic)

Also, if you can find a copy of the schwarzbein principle cookbook @ your library (or elsewhere) there are a handful of non-meat meals... and lots of other good (mostly) low-er carb recipe ideas.

Use eggplant slices, salted and rinsed instead of pasta for lasagna. You can even put cheese (I use tofu ricotta) and spread it on and roll it up for something special.

Baked squashed. Just slice in half and fill with a stuffing.

Chop salads with some cold baked tofu/tempeh/beans.
