I have a couple of pounds of ground beef I need to cook so I'm going to make a big batch of enchiladas tonight and I will use the rest of the meat for taco salads and nachos for tomorrow and the next day.

With DH out of town we're continuing the packaged food trend.... Frozen pizza. At least it's chicken and spinach

It's asparagus season now (or "smelly pee season" according to DH ), so we've got a glut of it from the garden. Supper tonight is freshly-cut asparagus, leftover turkey chopped up and Costco tortellini in a jarred alfredo sauce. There's almost as much asparagus and turkey as pasta on our plates, so I'm forgiving myself for the jarred sauce.

Tonight we had Tilapia with a Pesto Sauce, Pasta with olive oil & basil, and mixed vegetables.

Chicken stir fry with broccoli, asparagus, red, orange and yellow peppers, mushrooms, bamboo shoots, water chestnut and baby corn served over angel hair pasta or chinese noodles, I'm not sure yet.

Lunch - stir-fry Supper - I got to eat out, by myself! I had steak, sweet potato, and broccoli/carrots Today: Lunch - homemade burgers Supper - at IL's. Need to throw together something simple to bring for the boys and me though since we probably won't be able to eat what they're cooking...
