I feel like I tried roasting green beans once and surprisingly did NOT like them - it brought out this really odd sweetness that just did not belong on green beans. We love roasting broccoli, cauliflower, Brussels sprouts, okra...but we do NOT like roasted green beans.
Shepherd's pie at my house tonight, with leftover lamb from Easter.

I made this Chicken, broccoli and cauliflower rice dish and we liked it! I made a few modifications based on the comments - added and egg and a big spoonful of greek yogurt. In the future I would use fresh broccoli florets instead of the frozen chopped broccoli. (Did not mention the cauli rice to anyone and it passed. :whew )

Last night was cheesy beef enchilada stuffed green peppers, basmati rice, corn.
Tonight is whole oven-roasted chicken with potatoes, carrots, and green beans with chick fil a copycat coleslaw on the side. Coleslaw is made and chicken and veggies are in the oven! I love it when I get supper prepped early!

I used to plan to have dinner prepped early when my kids were little, and it made a tremendous difference in how our evenings went. Now I rarely think of it, but it does sound nice!
Today is my firstborn's 21st birthday! We're having steaks, shrimp, fries (his suggestions), roasted veggies (my suggestion ), and lemon cupcakes.

IP sesame noodles with added chicken. It's yummy hot, cold or room temp so it makes a great take it on the go dish.

Earlier in the week I made risotto with Italian sausage and blanched broccoli. It was a huge hit.
Last night we made Italian meatloaf. I've never been a meatloaf fan and this was only the second time I made meatloaf as a mom. But this recipe was so good. It's going into our winter menu. |

Tonight my dad brought over some ribeye steak. So we grilled those, along with steamed veggies, cabbage salad, and cheesy rice.
