Mediterranean tilapia (loosely based on this recipe), roasted Greek potatoes (although I forgot the parmesan and parsley ), asparagus au gratin from the garden. It was all really, really yummy. But how many casserole dishes does this meal use? 1, 2, 3! Did I mention I really don't like washing casserole dishes?

I just got a ton of produce this morning from a buyers co-op.
I've tried to plan meals this week around this abundance of produce as well as an abundance of tortillas. My menu: Today - ground meat tacos with poblano ranch dressing - I added diced onion, bell pepper, and garlic to the meat and some corn that came in my kids' free school lunches Sun - coconut curry chicken with Tempe squash, bell pepper, green onion, garlic, celery, and peas from the school lunches Mon - Stroganoff with carrots cooked with the egg noodles and fresh mushrooms and fresh green beans as a side Tues - enchiladas with homemade sauce using poblano, jalepeno, onion and tomato - using corn tortillas I think Wed - mini Italian meatloaves, mashed potatoes, and asparagus Thurs - Baja fish tacos and homemade fresh salsa using corn tortillas again Fri - spaghetti squash pizza boats! I got two small squashes! Sat - burgers with corn on the cob and any potatoes that are left made as oven fries Sent from my Pixel 3a using Tapatalk

I made a new recipe today called Smoky BBQ chicken chili. Ugh, I won't make it again; it was way too sweet.

We had chipotle BBQ chicken, roasted asparagus, and mashed sweet potatoes tonight.

Tonight we had ,'vegtable stack ups' a family recipe I few up with. A hamburger party toped with mashed potatoes ( I add atleast 1/3 cauliflower in ours) and toped with a cheese ( I use dayia chedder sauce thined out) sause with peas in it.

Tonight was the stroganoff and I put carrots and yellow squash in with the noodles. It was yummy.
Also I'm loving the frozen Rhodes dinner rolls. Preheat oven to 200 then turn it off and stick the rolls in for a couple of hours (I need to actually time it. I have over risen them) and then bake them according to package. Really easy to do! Also, I'm going to attempt to make dessert only once a week on Sunday. We are eating way too much sugar!
