Inspiration! February eats...
So …
Breakfast: blueberry flax oatmeal Lunch: roasted cabbage "steaks" with sea salt and olive oil Dinner: something Korean. (Our church shares space with a Korean congregation. Every Saturday night the cook a traditional Korean meal, and for a $5 donation - money goes to a Cambodian orphanage they sponsor - it's all you can eat. Dh told the women I don't eat meat, so they usually have something special for me - last week it was mustard greens and rice.)

Breakfast - homemade cinnamon rolls
Lunch - potluck meal after church (soup, sandwiches, salads . . .) Supper - Hummus platter (hummus, olives, feta, raw veggies, pita triangles)

I have Indian-inspired eggplant curry in the crockpot for dinner.
Lunch: a salad dh made me (which is still sitting on the counter because I've been trying to set up dd's CPSE evaluations all morning… ) Breakfast: nothing

Breakfast was cream of wheat
Lunch was Lexie's version of "fajitas" (cooked peppers & onions with a bunch of spices), rolled up in tortillas with cheese, salsa and sour cream (when we have beans cooked she includes them but when we don't, we skip them). Supper will be broccoli soup (cook broccoli in salted water, then puree it in blender (or with immersion blender) with cooking water as needed to make it the right consistency. Serve with a dollop of goat cheese) and sour dough bread.

I made some yummy soup today using leftover brown rice from last night. There were a few leftover beans, too. I mixed the rice and beans together and put in 10 cups of water. I cooked an onion, half a red pepper, half a green pepper, some mushrooms, and a tomato and added them. I added Liquid Aminos, tumeric, a dash of cayenne pepper, a few shakes of red chili pepper, sea salt, lemon pepper, garlic powder, and I think that's it. It's really good.

Besides the soup (several bowls), today I also ate a Tofurkey sandwhich, apple crisp, a tortilla with Daiya cheese and spinach, some celery, a peanut butter and fruitspread sandwich, ... I think (?) that's about it. Right now I'm going to go make chocolate chip cookies.

I ended up also having a smoothie last night. It had spinach, almond milk, juice from half a lemon, plain soy yogurt, raspberries, a banana, ... and think (?) that's it.
Today I made some soup that was a little too spicy. We had scrambled tofu sandwiches. Raw veggies, raw fruit. I ate a Luna Bar. I can't remember what else. Well, besides a muffin -- I also had a muffin that I made. It's pretty good. It has garbanzo beans, almond meal, dates, some fruit spread, small banana, Earth Balance, coconut milk, rice milk, brown rice flour, all purpose flour, baking powder, baking soda, juice from a lemon, lemon zest, lemon favoring, raspberries, and flaxseed meal in it. I think that's it. I made up the recipe. I love to throw muffins together!
