Easy mini muffins

I discovered this recipe in a magazine and thought it sounded good so tried it - and LOVED it!!

To make easy peasy mini muffins - simply use pancake shake! I mix it up with a *little* less water than advised, then add things (straight into the container) like sultana's, spices, cut dates, puree fruit etc, then pour into the mini muffin trays and bake for about 15 minutes or so on around 180c (sorry, no idea what that is in Fahrenheit for all the US members). I love pancakes as it is, but these are addictive delicious little things that are hard not to eat all at once!

For people like me that aren't big fans of baking, they're SO SO easy and yummy, even my fussy kids eat them!

I added choc chips to one lot, that was when I worked out to make the mix a little thicker than you would for pancakes, or else they all drop to the bottom and make a chocolate puddle on the base! LOL!

It's not on my blogs, just something I read in a magazine.
