Tell me about scrambled tofu for breakfast. I need your recipe!
Im looking online for some recipes but im kind of looking for one that is more kid tested, tried and true and I know one of you ladies but know how to make some decent tofu! Thanks!

I used to LOVE the Fantastic brand tofu scramble- but it's gone, I can't find it anymore . I tried making my own recently with decent results. I sauteed minced onion and green pepper in Earth Balance, and then added crumbled firm tofu, tumeric, onion and garlic powder, sea salt and white pepper. Something was missing, but I couldn't place it. It was better once it was rolled in a tortilla or put on toast spread with Earth balance, but it wasn't quite the same thing as the Fantastic mix. I might go another direction next with some balsamic vinegar or Bragg's. . Or... lol, I'll be back, I'm gonna check out "vegweb" real quick.
Just checked out Fantastic's website- SEPTEMBER 3rd they're bringing back the Tofu Scrambler!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !!!!!! I'm gonna be camped out waiting for the store to open.. . LOL, Emily!! I've done that before, too, but I always end up missing the "Fantastic" taste. pathetic, isn't it? Oh, and I love crumbling up some veg bacon or soy sausage over the scramble and rolling it in a tortilla with some of the Cascadian Farms "potatoes o'brien". I do it a lot in the fall and winter for a comfort breakfast. |

Wow, Mandie, that sounds so yummy. I'm never that creative. I usually just crush up half a block of extra-firm tofu (Whole Foods 365 organic brand is great.. and cheap) with my hands into the pan, pour about 4 seconds' worth of olive oil over it (pour and count to four.. ish ), then spin the spice rack and add whatever sounds best at that time.. usually salt, pepper, tumeric, sesame seed for crunch. If I'm feeling extra capricious, I'll add a little vegan "sausage" or "bacon" to it, but most times I don't. I agree that a tortilla wrap around it is yummers. (I usually do a sprouted whole grain wrap or an organic whole wheat wrap.)

I crumble extra firm tofu into a frying pan and when it starts to yellow up I turn off the heat and add Turmeric (turns it yellow) and veggie pepper and season salt and garlic. Then we add ketchup
