OK, this raw nacho cheese is actually BETTER than the real thing!!!

I didn't think it was possible. I even made DS taste it first to make sure it was OK.

It was so good we ate a whole batch in one sitting. I think next time I will add jalapeno, and use it for corn chips. Mmmm, nachos.

anyone want a recipe?

Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison

1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, or almonds (I used what I had - half raw cashews/half cashew butter)
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice

Just blend all ingredients in blender or food procesor until creamy. Add more/less water to get the desired thickness.

Oh man it's so good. If I could have fit my head in the blender, I would have licked it clean.

hmmm, hard to say. I only made half the recipe (I needed half a red pepper and when I turned my back on DS it somehow turned into 1/4 a red pepper.

) maybe 3/4 - 1cup?

wait, that's how much mine made, so- maybe close to two cups.

did you use a food processor or a blender? I used my blender b/c my FP stinks.
