The coconut curry was surprisingly good! Three of my four kids ate it. (Littlest doesn't eat anything. Unless it's ice cream. Or mashed potatoes. )
I subbed frozen cauliflower for the broccoli, because I just can't stand overcooked broccoli, which I was sure was going to happen in a crock pot for that long. And I also added a little (1t) of curry powder. Dh added hot chiles (I think they were Thai chiles from the garden) to his bowl. We're out of sriracha, which I would have used. Next time!

We had a simple veggie chicken stir fry tonight served over raw julienne cut zucchini noodles.
Tomorrow I Plan to make coconut chicken curry. I need to remember to thaw some chicken tonight tho.

Tonight is meatball pasta bake as DS #1 will be at work and it's easy for him to reheat when he gets home.
Tomorrow will be a chicken and veggie slow cooker.

We were supposed to be out all day so I put Cheesy (Ranch) chicken in the crockpot. I've got sauteed broccoli for those that eat it and peas for the rest as veggies. Our afternoon classes were cancelled, and since I was home...... I made snacks. (Butterscotch pudding and Cheerios marshmallow treats.) I may have a problem.

Chicken enchiladas was on the menu, but I am tired so I am just doing Chicken Enchilada Casserole instead.
And a simple green salad, and some instant pot Mexican rice.

Tonight I had quinoa with caramelized onions, chickpeas and sauteed summer squash left from yesterday's lunch. It came out really nice and I'm kind of proud because I just threw it together without a recipe or anything.
