Gluten Free Vegan HELP!
Howdy Y'all...my sister's girlfriend is staying with my folks for a couple of weeks. She is a vegan with celiac's - so g/f as well as veg. Does anyone have any good recipies? My family is vegetarian, so my mom is used to cooking veg, but she uses a lot of cheese/pasta, so she could use some new ideas. Thanks for your help!

Just use wheat free tamari or Braggs for the soy sauce, and non-dairy milk for the potatoes. I use broccolli, not cabbage or kale.

Black Bean Burgers are super easy. I take a drained can of black beans, mash them up, add ground flax for binding (maybe 1/4~ish cup), salt, pepper, onion and garlic powder. Patty them and saute. You can go crazy and add other things too, like veggies. We serve them with sweet potato fries, but they are very versatile.
Oh, another meal idea...hummus and veggies. |

I have a ton of GF recipes posted in the cooking forum, mostly in slow cooker section or desserts/breakfast. Some use eggs, but you can also use an egg replacer (I buy the Ener-G or you can use ground flax seeds).

yummy.... i guess the black bean patties could be made w/ dry beans too ( cooked of coarse, we can't do anything canned ) doyou think the sheppards pie would be very different w/o the soy? we are soy free.. i have a feeling it would tast yummy.. i am gonna try it.. and well our mashed potatoes would be mashed rutabegga we don't do potatoes either .. .. ( also plan to leave out the corn, cant do that either) but i still think it will be yummy

I'll try to come back this evening with actual recipes but I'd look for gf rice pasta and Veganaise (in the refrigerated section of most hfs) and with those substitutions you can make a lot of things. Also, EnerG has a great Egg Replacer I find that for most people knowing what to substitute with helps them use recipes they are familiar with and not feel too overwhelmed. If you make spaghetti just use a vegan sauce (get it in a jar even ) and the gf pasta.
Also, if she goes into a Whole Foods or Sprouts or Trader Joes (if she has one near her) they will be able to help her find things and know about the combo special diets

I need help here too. I need to bring dinner to my friend's sister who was just diagnosed with stage 4 lung cancer . She's a vegetarian and one of her son's is autistic and is gluten-free. But I need an actual recipe because I'm one of those people who can't cook unless I have exact measurements. HELP!

Heather, you're so thoughtful for asking. The news hasn't been good. She had the tumor in her lung removed and they found the cancer had spread. She's having the gamma knife done tomorrow on lesions they found in her brain. She is not a believer.
