"Stuffed" Bell Peppers. I say "stuffed" because instead of stuffing the peppers, I dice them up and mix them in with the rice mixture. The kids are more likely to actually eat the peppers that way.

We had simple taco bowls - taco seasoned ground beef, cheese, sour cream, torn corn tortillas for DH and me, rice for the boys. I usually do them with lettuce and tomato too but didn't have any today.
