Tonight is turkey pot pie. It's the last of my Thanksgiving leftovers.
To use them all, this past week I've made: Turkey soup from the turkey stock and various bits and pieces of leftovers. Turkey sandwiches for lunch to use the extra gravy, cranberry sauce, and turkey. Sweet potato muffins out of a leftover baked sweet potato. Shepherd's pie using the leftover mashed potatoes. Sweet potato curry using the spare sweet potatoes I didn't bake on Thanksgiving. Coconut macaroons out of the egg whites left over from the pumpkin custard. Turkey pot pie to use the last of the turkey, celery, and carrots.

Last night was falafel. Tonight is corn dog casserole. Tomorrow I'm not sure. I have the stuff to make Beef Plov. Might save that for Tuesday.

Fall is the perfect time for bone broth! I had a variety of chicken and beef bones in the freezer so i made a delicious broth. Then added tons of garlic, onion, heirloom tomatoes, carrots, and navy beans to the IP, cooked, and then pureed all that in! I love it because it makes for a nice thick consistency of "stew" and the kids have no clue all the amazing goodness they are eating! (not to mention the delicious flavour). Then I added some chopped veggies, cooked a few more minutes, and served.

We had spaghetti bolognese last night, with (shop bought) garlic bread and loads of cheese. Filling and delicious but maybe not the healthiest meal!
