Toddler Muffins...yum-o!
I found these yummy muffins on recipezaar.com (great place)....My three yr.old is a wicked picky eater (did I just say wicked? ) and Im always trying to find new ways to get some veggies into her! she loved these and actually thinks they're cake! WAHHHHAHAHA!! so I thought Id share them on here....
Toddler Muffins 3/4 c. applesauce 1/2 c. brown sugar 1 egg 1/4 c. veg. oil 1 c. grated carrots 1 c. grated zucchini (I pureed the veggies so she wouldnt be turned off by orange & green chunks!) 1 c. whole-wheat flour 3/4 c. all-purpose flour 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. ground nutmeg 1/2 tsp. salt Preheat oven to 200 degrees C. (I think thats 350F? check your conversion charts) In a large bowl, whisk oil & sugar. Beat in egg & applesauce. Stir in carrots & zucchini. In another bowl, whisk flours, baking powder, cinnamon, nutmeg & salt. Fold dry into wet, until just mixed. Grease muffin tray. Spoon in to tops of cups. Bake 18 - 20 minutes. Test w/ toothpick. Enjoy!! |

yes! they were raw and I just added a tsp. of water to help grind the carrots they are deeeelish! very moist from the applesauce and a great flavor!

amazing timing! I was *just* saying to DH that I wanted to make some simple muffins for the kids to have. Healthier ones for them to eat with yogurt, and these sound perfect!
