I made this for desert tonight. It was lovely making a desert I could lick the spoon on when I was done mixing.
CRUSTLESS KEY LIME PIE 1 small package sugar free lime jello 1/2 cup boiling water 8 ounces cream cheese, softened 1 tablespoon lime juice, one small lime Lime peel, finely grated, one small lime **1/2 cup heavy cream (see note below) Dissolve the jello in the boiling water, stirring for 3 minutes. Beat the cream cheese in a medium bowl with an electric mixer until smooth. Gradually beat the jello into the cream cheese (this will make a mess and splatter all over the place). Add the lime juice and rind. Mix the cream separately on high till stiff, then fold the lime mixture into it. Pour into a pie plate that has been sprayed with nonstick spray. Chill until set. Makes 4 servings Do not freeze Per 1/4 Pie: 312 Calories; 31g Fat; 6g Protein; 4g Carbohydrate; trace Dietary Fiber; 4g Net Carbs Per 1/6 Pie: 208 Calories; 21g Fat; 4g Protein; 3g Carbohydrate; trace Dietary Fiber; 3g Net Carbs

Yum, sounds good! I love citrus-y desserts.
My dinner tonight was sweet Italian sausage sauteed up and then mixed with some ricotta cheese and basil. Normally the dish would include pasta--it's quite simple yet scrumptious and would make a good family meal. Tomorrow night for dinner we'll have a big Caesar salad. (Hold the croutons.) That'll make up for the complete lack of vegetables tonight. |

I made BLTs with the oopsi bread. Soo good it tastes just like BLTs. Last night I had fake spaghetti. I sliced zucchini to mimic pasta and used minimal sauce. It was still very good.

yeah, I think that is the hardest thing. I have it very easy because even though my husband is next door to being a vegetarian, he is very flexible about dinner and has no problem just fixing himself some cheese and crackers if he sees that my meal is going to be more meat-centric than he can handle. (I know--he's amazing.)
When I had kids at home and was doing Atkins, it was harder and required some creativity! I had a good run with the Low Carb menu planner from FlyLady. The meals were constructed to flex nicely between regular eating and low carb eating. But you're already doing a great job with that! |

I am making this tonight. Chicken Alfredo 2 tablespoons olive oil 1 teaspoon garlic powder or minced fresh garlic to taste 1/2 teaspoon rosemary (optional) 1/2 teaspoon marjoram (optional) salt (optional) black pepper (optinal) 1 package of 3 or 4 boneless skinless chicken breasts 8oz heavy whipping cream 1-2 tablespoons sour cream 3-5 oz parmesan cheese *Note: these measurements are just approximate, I don't ever use measuring cups or spoons, I just go by what looks right and how it tastes. Cut chicken into bite sized pieces season with ground spices and salt heat sautee pan and add olive oil add fresh garlic (if using) add chicken, cook thoroughly add cream, sour cream and parmesan cheese taste test and adjust accordingly (your sauce will taste pretty close to the finished product almost immediately after adding all ingredients but allow for the sauce to cook a few minutes before adding anything) Reduce heat to a simmer and cook for 10 minutes or until thickened, stirring occasionally. I will again use some Zucchini for noodles and add some Broccoli to make my veggie quota. For Breakfast I made muffins. I used a dozen eggs about 6 pieces of crumbled bacon one slice of tomato and about a half cup of green peppers. I mixed it all up and made a dozen muffins out of it. I have no idea the carb count but it should be really low since I stayed well under the one cup for all 12 and I just had one with some extra bacon.

Did you ever get dry mouth? I have times where my mouth feels so dry I have to keep sipping on water. I drink more now then I did before atkins so it cant be thirst.

Yes, I remember that. Usually when I had dry mouth my breath was also rank. I constantly drink fluids because urine is one of the ways the body gets rid of toxins and fat.

No one has complained about my breath thankfully. But I have been drinking a lot more water thanks to my dry mouth. So hopefully it is flushing alot of bad stuff out.
