I made a quick chili last night (ground beef can of black and pinto beans rinsed can of rotel can of whole tomatoes some garlic and cumin.. We are having a guest tonight and I was spending the day cleaning and had no time or patience for anything else...

TOnight we are eating out.

We will be having cheese ravioli with homemade marinara sauce and creamed spinach. It is my go-to meal for absolutely crazy days full of commitments and not much time to cook.

I was going to make burgers tonight, but I only have 1 lb. of ground beef and DH informs me that this will be woefully insufficient for our family of huge appetites.

So I need to do something with ground beef and the excess of sliced cheese I'll now have, that will stretch a little further than burgers.

Tonight we're having a roast, it's been in the crockpot since last night. As sides we have asparagus spears and potato wedges ready to steam and bake respectively.

My Dh haaaaaaates peas. Hates them. I'm not sure why.

Emili, would your family go for burgers where you've mixed in grated carrots and onions and bread crumbs and such? It would stretch the ground beef and be kinda like meatloaf in burger form.

Because theyre stinky and icky

We're have coconut chicken strips. I don't know what else. I might pick up some salad stuff for DH and I, and slice up some fruit for the kids.

You've GOT to be overcooking them, then... or buying a bad brand. Cooked peas should taste just like fresh ones, only hot.

If they don't, they're being overcooked or they were too mature when they were picked. If you're buying frozen, try Green Giant "sweetlets" packages. Drop them in boiling water right from frozen, this will lower the temp of the water. When it comes back to the boil, drain them. They're done. The outside of the pea should NOT be tough and chewy nor should it be mushy at all.

If you're cooking them properly and you still don't like them... you're really, really strange.

We had hot dogs mixed with "hot dog sauce" and cheese, topped with BBQ potato chips

I buy SteamFresh frozen peas. They stay yummy when microwaved according to package directions

I thought about that, but I didn't have any breadcrumbs or carrots or anything except zucchini to stretch it with, and not even enough of that to make a real difference.

I ended up just doing 1 "small" (1/4 lb.) bunless cheeseburger per person and made 3 different sides (half sour pickles, caesar salad, and roasted potatoes) to go with them. We ate a lot of potatoes and it filled us up in the end!

Tonight I'm "making" turkey soup, meaning that I dump a couple quarts of frozen bone broth into a pot with the frozen turkey that I saved from our last carcass and a bag of frozen soup veggies. I love putting forth zero effort.
