The garden potatoes are finally starting to sprout in storage now, so we're going to have to make a lot of potato dishes this week! I feel so for not moving them somewhere else when I got the grow lights up and running (in the same room). Just that bit of light reaching out from under the lamp reflectors triggered the first sprouts within days.
I haven't made scallopped potatoes in months. Might do that tonight. Not sure of the other meal components yet. |

I have ground turkey defrosting, so I will be making something with it. We have macaroni noodles, so I'll probably throw together a casserole by adding some vegetables. I wish I had a more definitive plan
