gordan smart choice fish fillets (which we will pretend is healthy) roasted beets velvetta Mac N cheese (for DH and DD) salad fresh pineapple Margaret can't have the fish or Mac N cheese so I'm making her a PB and honey sandwich and allowing her the option of finishing off the corn chips I bought a few days ago. She loves beets salad and pineapple though.

I tried a new recipe for dinner tonight. Chili cornbread bake.
Basically it's cornbread baked as the bottom layer. Then add the chili and top with cheese and bake again. It was meh. I won't make it again like this. We love cornbread and we love chili but combined with the cornbread on bottom it made for mostly just mushy cornbread. So next time I'd keep the two separate. Or maybe try with the cornbread on top if I do a casserole type thing...

I made this really good Spanish mac and cheese, you make your white sauce mac like normal but when you add the cheese also add in a pound of chorizo fresco (soft Mexican cooking chorizo). Top with crumbs mixed with about 1/2c more grated cheese and bake. It was super good. I overcooked my asparagus though because my children took forever to come home .

Roast leg of lamb at our house tonight, if I can pace myself with the prep throughout the day. Want to be sure and get that done before baby comes, and then fill our freezer with the leftover lamb + broth for shepherd's pie the rest of the year. Rosemary roasted potatoes/onions and probably green beans with it. Or maybe salads. Need to keep it simple. I've learned my lesson to start it at 3:00 just in case...last year we were eating dinner at 8PM because it took so much longer than the recipe said. OY!
