Last night we had Pickle-Brined Baked Chicken Tenders, Summer Macaroni Salad with Crispy Pancetta and Petite Peas in a Creamy Lemon-Thyme Dressing, and a green salad.

Tonight I made Chicken Tikka Masala, Indian Roasted Cauliflower and Trader Joe's Tandoori Garlic Naan (in the bakery, not the frozen....so yummy and dense!).

Thursday - Homemade GF macaroni and cheese with chicken and diced tomatoes
Friday - Sauteed chicken with green beans and Craisins (the boys had theirs with brown rice) Today - Homemade GF fried chicken bites, mashed potatoes from scratch, green beans for the boys, leftover Brussels sprouts for me
