trying again - veganbreakfast ideas?
I am listening to an audio book called Veganist and while I see veganism as a good thing, I am having trouble putting it into practice and finding foods to eat. My first problem is breakfast. I am a picky breakfast eater - I don't like smoothies, don't like sweet things for breakfast, don't like dry cereal. I can do steel cut oats sometimes but don't really like it. I often have a sandwich for breakfast- but I am giving up lunchmeat and I tried almond butter today but it is sweetish and not satisfying. I also often like eggs and vegetables but am leaning toward vegan which would mean no eggs. I like savory rather than sweet foods for breakfast and don't mind eating food meant for other times of the day as long as it is quick and easy. The only days I eat eggs and veggies is about once a week when I don't have to be at work early.
So, any quick and easy breakfast ideas? thanks

Leftover curry and rice.
Slices of tofu fried with spices and put between an English muffin. Biscuits and gravy Breakfast burritos...our favorite is tofu scramble made with salsa verde and tater tots Leftover Stirfry and rice in a tortilla. Tofu migas Any leftover really. Hashbrowns made in a waffle iron Hashbrown patties with baked beans on top Baked beans on toast or a biscuit Savory Scones Cornbread or cornbread cooked with a layer or beans in the middle. Black beans and sautéed greens. Anything sound good there?

Thank you. Most of it sounds good actually. Do you have recipes or cookbook recommendations for any of it? The savory scones, or the fried tofu slices or a good curry and rice recipe?

There are lots of good rice and curry recipies at showmethecurry.com/. You'll have to veganize them of course but just substitute ghee with coconut oil, paneer with tofu and cream or milk with coconut milk. Easy peasy and sometimes even tastier!
Also I have a savory scone recipe which is GF. If you want it let me know bu I'm sure you could find a regular wheat one online somewhere.

I would just use a scone or biscuit recipe and toss savory stuff in it. That probably isn't helpful is it?
Curry is my fast meal. I keep my favorite jars of curry sauce and then dump whatever I have around in there. Cauliflower, potatoes, chickpeas and red lentils are some of my favorites. These are the sauces I use http://www.pataksusa.com/productsearch?type=cat&cat=5. I can get a few of them in my little town. Cookbooks I use a lot are Chef Chloe and Happy Herbivore. Both have websites so you might find some recipes there.

There's a chickpea curry with sweet taters and cauliflower someone posted here. The original recipe has lamb in it, but we always do it vegan.

For Tofu I would slice it so it is sorta fried egg shape but square. Then season with spices I like. You could, also, marinate it if you prefer. Poultry seasoning on tofu is tasty. Kinda like chicken or thanksgiving stuffing.

I usually do a scramble and then smoosh that on my English Muffin. I use a block of firm and a block of silken tofu. Mush it in a pan with a spatula. Sprinkle with a little turmeric (too much will be bitter) and cook it a bit (it becomes more yellow after cooking). When the liquid starts to evaporate add your favorite salsa. I think Isa Does it (it is one of her latest cookbooks) has a bunch of tofu scrambles that you prep the night before and let marinate. My mom does scrambled tofu where she takes firm (or extra firm?) tofu and dices it into little cubes then saute's it with herbs, spices, peppers, onions, mushrooms. . . sometimes other veggies. I think she includes some tumeric to make them yellow, so they "look" more like an egg/veggie scramble.

For dinner, we tried some more vegan food products - Daiya Cheeze Lover's Pizza and Bocca Chik'n Veggie Nuggets. And, I made a stir fry with fresh veggies - mushrooms, garlic, onion, ginger, squash, tomatoes and greens and some baked sweet potatoes.
Both kids thought the Chik'n nuggets were gross. I ate one and a half nuggets but they were not really good so I gave the dog part of a nugget. The dog liked it. My husband also liked the Chik'n nuggets. He said they were not wonderful, but were ok. My son, husband and I thought the Daiya Cheeze pizza was ok. My son and I liked the flavor of the tomato sauce a lot. My daughter thought it was awful and went on a rant and rampage yelling about how I need to feed her real actual food and not this awful stuff that is not food. The kids would not eat the veggie stir fry but my husband and I did and we liked it.

I just make really good dough and roll thin. Put, in a hot oven. I top ours with sauce and veggies. My kids don't mind the missing cheese because the crust is so good. Plus, it's a cheap dinner.
You can do a Mexican one with beans or a Thai one with peanut sauce. I couldn't afford to feed my kids chicken nuggets and frozen pizza anyway.

I think the trick is to introduce totally new foods. The meat substitutes will always fall short to those who like the real thing.
