Single resource for "intro" to veg recipes
I want to start cooking more vegetarian meals. We typically have one meal a week that is vegetarian, but my DH is a hard core meat-eater. My DD doesn't eat a lot of meat proteins, but has an egg white allergy, so that eliminates a lot of egg heavy dishes. She is also what I call dairy-free light. She can tolerate a slice of pizza with cheese once in a while, but we don't drink cows milk or eat cows milk yogurt. (at least she doesn't - I do every once in a while).
Is there a blog, book or resource you would recommend for a somewhat meat-heavy family transitioning to more frequent vegetarian meals? I'm thinking really savory, kind of heavy vegetarian dishes. Some of the things we like that are vegetarian - bean dishes, lentils, rice, tofu and cheesy things. Thanks! |

It sounds like you might have better luck searching vegan dishes since you are dairy/egg light.

I'm really hesitant though for some reason. It seems more difficult to cook vegan and I'm afraid it will take out ingredients like butter or some kinds of cheese that my DD can tolerate in small amounts. It feel like those ingredients make things "richer" and more enticing to DH. |

Some recipes here, and there's a book. And any cookbook by Isa Chandra Moskowiz. She has some of her recipes online to try at http://www.theppk.com/recipes/ Both are vegan, btw. |

You might look at the original Moosewood Cookbook by Mollie Katzen. Some of the recipes are dairy heavy, but they do use dairy and tend to be hearty foods.
Maybe the original Laurel's Kitchen also. The older vegetarian cookbooks like these were more about absence of meat and less about low saturated fat. But then you might have to reduce the dairy. |

My go-to recommendation: http://pcrm.org/kickstartHome/messages/day1.cfm
My best advice is, don't look for to make veg/vegan versions of meat meals - you'll almost always be disappointed by anything that someone touts as "just like" something...it never is. Explore flavors and meals that good on their own merits.

Good advice. I love vegetarian / vegan eating and wouldn't miss the meat most of the time. My dh, he would. So he can keep eating his favorite meat dishes and these will just be new, different flavors and a more wide variety of veg. We love ethnic food so that should help.
