It's an easy-to-make grain that can replace rice in a lot of cold salad recipes. I LOVE it and eat it frequently. Here's some nutritional info from wikipedia:

I haven't posted for like 13 days. Where's my accountability peeps?

DH has the camera today, but I'm coming out of a transcription fog that has been keeping me up to 3 am each night typing. I have to stop this work, it's killing me.

So, I'm starting back up today with pictures starting tomorrow.

I've got a house in Nebraska. Let's meet halfway and live there. Or I can just start my intentional vegan gentle christian community here in CA in our backyard. Now that would be fun!

I'd totally trade food for other stuff. I LOVE to cook.

Well, I'm not doing the pancha mama's salad, I'll just show you some random things.

I ate this yesterday.


From our garden:
squash
swiss chard
alfalfa and radish sprouts
watermelon radish
jalapenos

Not from our garden:
tomatoes
beans
brown rice
potatoes

All for a total of under 6% fat and about 1600 calories. I ate some more today. My goal for the day is to stay under 10% fat. So, I will have a smoothie next 'cause my sweet tooth is acting out

Here's what I made for lunch:



Braised Eggplant from www.fatfree.com

1 large eggplant or 5 small eggplants
3 inches of fresh ginger sliced into fine strips
2 large cloves of garlic crushed
2 tablespoons soy sauce (try low salt, amount can be reduced)
2 tablespoons mirin (japanese sweet sake - or replace with sweet sherry)
1 teaspoon sugar (some people prefer more)
1 cup water or veggie stock (no salt),
1/2 tsp chinese five spice powder

Slice the eggplant into bite sized bits. Saute ginger and garlic in a
little liquid (1 tbsp) in a nonstick pan. Keep pan fairly dry. Brown
eggplant gently (5 to 10 minutes). Add seasoning mixture and water as
needed. Simmer until eggplant is cooked through.

This is good served on rice or toast, or wrapped in tortillas or rice paper
wrappers. I use small amounts to add flavor to bland foods like LF Tofu.
This keeps well in the fridge for several days. Left-over eggplant is
really tasty mixed into veggie burgers. Its even good in salads.

I'm eating it with rice right now and it's FANTASTIC.

Your wish is my command. I just got home literally about two hours ago from Washington state where I've been since last Tuesday and am ready to start my food journey again. I gained 4 lbs in the time I was gone and am NOT happy about that at all. I'll start again tomorrow morning and have some pics and recipes up for you ASAP!!!
