I make whole wheat for the boys and I every few days and white for Dh about every other day. His lunch is always two sandwiches so I have to make more of his bread.

My ww seems to rise ok, are you using a bread machine?

Every other day. I make whatever sounds tastey at the time. Right now we have oatmeal bread.

Twice a week, 3 or 4 loaves at a time.

Could your yeast be bad? Are you waiting long enough for it to rise? Is your kitchen really cold? Do you want to post your recipe so we can try to trouble shoot with you?

When my bread wasnt rising well it was because the water I put with the yeast wasnt warm enough and because I didnt put the sugar{or honey}in with the yeast to activate the yeast.I was also using the WW flour from the store which is really heavy and doesnt rise much.I now grind my wheat and it rises better.

a couple times a week.

ww rises well for me if
1)it's fresh ground flour(there's a machine at the local grocery that has wheat in it, and you push a button an it spits flour out the bottom of the machine) - though I made ww bread with flour bought in bulk at the WF store for years just fine before said machine was put in at the local grocery
2)I add @ 2 TBS. vital wheat gluten/2 loaves dough
3)I have enough warmth *and* humidity when the dough is left to rise - in the winter I put a pan of water in the bottom of the oven, pre-heat the oven to @180, put the dough in the oven and immediately turn the oven off. (and if the water isn't all evaporated before it's time to bake the bread, remove it or the extra humidity can cause a bit of a colapse when the bread is baking)
4) mix the salt with part of the flour before adding- if you add the salt directly to the water/yeast/honey(or sugar) mixture, the salt can kill the yeast.

I don't use a bread machine. I've found that using SAF yeast is best (it comes in a hard brick and then loosens up when opened...think vacuum sealed coffee). I store it in the freezer. Anyway, I never had luck with bread rising until I switched yeasts. Only problem is that it can be hard to find...though I highly recommend it.

I make like 12 loaves at a time and freeze them. I make some 2lb loaves and some 1lb loaves. I probably make it once a month, depending on how quickly we go through it.
