Kristin, my dad gave us his big pizza pan with the holes when they bought a convection oven and the pan didn't fit. It does bake nice crusts!
I found a minestrone recipe that's kinda similar (if memory serves) to the one I loves and lost the recipe for (), so that's what I'm making this afternoon. Hopefully it's yummy! |

Last night I took toasted ravioli and chicken satay to my get-together. The satay was my first time making it and it was a HUGE hit.
Tonight was going to be Mongolian beef, rice & stir-fried veggies but I just found out that DH is going to be in the field, so I think we'll go to Chick-Fil-A instead.

Not sure about dinner yet, but I do want to throw out, since everyone loves pizza, that we have a bread stone for the oven and it's awesome. I recommend it for pizzas and bread if you make them often!

Lunch (our main meal) was ground beef and gravy with green beans and rice (all mixed together). Dunno about supper yet... Might just do scrambled eggs for everyone else and leftovers for me

Tonight was cabbage soup. DH is at the fanciest steak place in town... Somehow doesn't seem fair. TBH, my dinner had far fewer calories and I could enjoy my kids smearing it on their faces.

Did you purée it? I was googling recipes for leftover cabbage and one was "Cream of" cabbage soup, but it was just veg base + cabbage pureed and "topped off with cream, if desired." it sounded good but I made something else.

No, I just chopped into stamp sized pieces and added it to carrots, onions, tomato and beef base (also leftover beef brisket). Slow cooked all day. It was pretty good... Pureed cabbage does not sound so good to me...

DH messaged that he was going ot be home afterall. I had some meat in the fridge that I was going to do some freezer meals with, so I cahnged it to tonight's meal. I made a triple batch of Mongolian beef and I'll make freezer dinner kits out of two batches.

Explain this to me please. The minestrone recipe I tried tonight was pretty blah as far as I was concerned, yet the girls both FINISHED THEIR BOWLS, despite the fact that it was dominated by green (celery, spinach, zucchinni).

Our lunch was a special first day of spring lunch of homemade tortilla chips, chickweed dip, chicken/apple salad sandwiches, maple sugar candy and homemade maple ice cream. Supper is buffalo/oat/black-eyed pea/sweet potato stew with tortillas.
