Fried and baked chicken (homemade KFC copycat recipe), mashed potatoes, coleslaw, biscuits, all from scratch and chocolate cake (from a box that DH bought on impulse but I had to make ).

The kids are having frozen tortellini, because my kitchen outlets shorted out when i plugged in the slow cooker containing the barb ue beef I made (excuse my lack of the letter after p in the alphabet) and i didn't notice for a couple of hours. Dh and I will eat the bb beef and homemade coleslaw later, after the kids are asleep.

I start out with 2-4 boneless skinless breasts, then either slice them in half lengthwise to make two thin filets or pound them out. Dredge them in a generous amount of flour and fry in a decent amount of olive oil until they're golden on both sides and cooked through. Then I remove the chicken from the pan, juice 3 good sized lemons (more if you're using more chicken), add just a little more olive oil (1 tbsp?) to the hot pan, add in the lemon juice and stir it around a bunch to deglaze all the yummy brown bits from the chicken . Toss in a few tbsp. of capers and let it all simmer until it's thickened to a slightly runny sauce consistency, then put the chicken on a platter and pour the sauce over it. Mmmmmmmmm. Totally a favorite here.

we ended up having pan seared chicken with near east brand rice pilaf and frozen (well cooked from frozen) peas and carrots and I made some starawberry off brand koolaid Ive been kinda missing my family lately and I find my self cooking or adding thigs that remind me of my c childhood..

I was looking for something for tomorrow when I saw this.
We'll be having Cuban Black Beans & Rice. I'm in serious need of a grocery run but have plenty of dried beans, & brown rice in the house. The crock pot will be going on as soon as I pressure cook my beans as the recipe calls for canned. |

I wanted to make some sweet potatoe fries from fresh sweet potatoes but when I found them in the pantry they would have been better if used two months ago. Yes they were so rotted and messy. found the stink I have been looking for. Gatta love it when kids put food away but leave it in the plastic bags. So we are having pancakes from scratch with bacon. Not vey iron packed for me but the kids love it.

After the day I've had.....I'm having a "pizza"-brown rice tortilla topped with sauce, mozza and sauteed onions, mushrooms, peppers and garlic, pizza seasoning, and some odd bacon I found in the fridge(might regret that last thing).
The rest of the family gets....drumroll....fishsticks from the freezer and leftover rice and veggies from last night. Mine's better, but I ain't sharin'!

I took pork loin out of the freezer this morning, but didn't have anything in mind for it at the time. I'm totally doing this. Better get started on the (brief) marinade and onions... it's already six o'clock. We've gone through our garden broccoli already, though, so it'll have to be green beans. Would basmati work? I've never tried jasmine and don't have it on hand.
