Default How do I cook with tofu? More questions p8

I love tofu. I've often had it in soups or stir fries or whatever but I've never bought and used it myself. I bought some silken tofu this morning. What are some simple ways for me to use it? Does it have to be cooked? Can it just be cubed and tossed through a salad? My family won't eat it, it's just for me, and I don't want to cook fancy meals with it, just throw a quick lunch or snack together.

Silken tofu is great for smoothies! I used extra firm for stir fries.

I can't help with silken tofu but thought I would share that I use extra firm tofu, sliced thick (about 4-5 slices per carton) then pressed with paper towels to remove excess moisture to prep for whatever I'm making. I love simple grilled tofu slices on my indoor grill, seasoned with Bragg's Amino Acids and a bit of sesame oil. I usually do the whole container that way, then cube leftovers to add to salads, veggie stir-fry, etc. I know a lot of people like to marinate but I have never felt the flavor difference was worth the effort for the things I've tried.

Toasted sesame oil, a bit of garlic salt...all I need to turn a slab of tofu into a meal.

silken can be added to smoothies, or used as an egg substitute in baking

extra firm is what I use in recipes

Default Re: How do I cook with tofu?

we always go for extra firm. i like to marinade mine in a ginger soy sauce concoction...and then bake/grill it. Even my husband loves it this way! He can't get enough.

otherwise, toss in stirfry...simple.
you can also crumble it and make into an 'egg' salad mixture, or we've done scambled 'eggs' mexican spices.

i've seen some great dessert recipes that call for silken but haven't gone there yet

OK, thanks, so it looks like I got the wrong sort. I got silken because when I was in Thailand in october, we got this delicious soup with the softest, loveliest, silkiest tofu in it. I wasn't thinking very smart though, because it's not exactly soup weather here in Australia. I make fruit/green smoothies every morning, so will use up this tofu that way, and buy firm next time. How much tofu can I get away with putting into a smoothie which I expect my kids to drink without them tasting anything out of the ordinary?

can't exactly answer your Q, since I don't use tofu in smoothies...but tofu has no taste, so i would imagine it's for texture. so use as you'd desire!

Default Re: How do I cook with tofu? Update: more questions!

OK, so I need to ask more stupid questions! I bought firm tofu and tried it in a stirfry last night - marinated it first in soy and ginger - and it tasted ok, but still not what I've had in restaurants. It also fell apart, I ended up with a soggy tofu mush (like wet scrambled eggs) in the bottom of my bowl. Maybe I'm still not getting the right sort of tofu - I see now you've all said EXTRA firm.

When you stir fry it, do you treat it like meat and brown it all over then set aside while you cook the vegies then throw it back in? or what? I want to perservere and get this right!

I had similar tofu trial & error at first. You do cook it first just like you would the meat.

This looks like a great simple but yummy tofu-veggie stir fry instructional video. The first sauce he adds is hoisen which is yummy and slightly sweet made from yams. I love anything with hoisen sauce!

My dd wanted me to share this tofu stir fry video.
