Roasting summer squash seeds?
I must have a super-powered green thumb this year for summer squash. *note to self: the already-notoriously-prolific summer squash might not need miracle grow liqua-feed.*
The yellow, summer squash I'm growing are HUGE by the time I need them for cooking. I had one that was 13 inches long and 12 inches around and thought it was huge. I have several in my garden now that are bigger than that. Even the smallest ones are twice the size of what I'm used to. I cut open a big one last night. It was nearly flavorless, but the insides resembled that of a pumpkin or butternut with the seeds and guts. Not what I'm used to seeing in a summer squash. The seeds were the size of pumpkin seeds, as well. Can I roast these seeds like pumpkin seeds? I can't find any information on roasting summer squash seeds. Probably because the seeds aren't usually big enough to think of roasting and eating them.
