The YUMMIEST linguine with sun-dried tomato pesto EVER (oh... and its vegan)

Oh my! This is SO yummy! The original recipe is from The Garden of Vegan I have never enjoyed a tofu dish before. Its terrible, but I just cannot cook the stuff. What kind of vegetarian could I be?!

Well... Now I'm officially a tofu convert

Linguine with Sun-Dried Tomato Pesto Sauce

Dry pasta (enough for 2 people)
1 12-oz package soft or silken tofu
1/4 cup olive oil
1 1/2 cups fresh basil
1/2 cup fresh parsley
10 sun-dried tomatoes
3 cloves garlic, roughly chopped
1/4 tsp salt (I omitted this - I'm not a salt person)
3 tbsp pine nuts dry roasted (I didn't dry roast mine)

In a large pot of water, boil the pasta. While the pasta is cooking, put tofu, oil, basil, parsley, tomatoes, garlic, and salt in a blender or food processor. Blend it until it is smooth. Pour into saucepan and add pine nuts. Heat until it is warm. Toss with cooked pasta.

Seriously, this tastes like a perfect pesto-y alfredo.

wonder if I could substitute white beans

Probably. I've done white bean recipes before that worked very well

You could probably do a small amount of rice milk instead too. Its really just for texture and creaminess.

I wonder if I could stomach it....
I used to make tofu weekly, and my favorite recipe was a tofu one, but then during my pregnancy before this one, it made me really sick and I haven't been able to eat it since. Maybe this will do the trick!

Do you think I could make this tomorrow even though my tofu says use by today? (I'm being lazy and don't want to go to the store for parsley and basil)
