Default What can I do with an overabundance of bok choy?

I asked B to pick up 3 heads of baby bok choy... he bought 3 full size... I have a LOT leftover... Any ideas what I can do with it?

ETA I'm a vegetarian who eats dairy but not eggs... I'm allergic to soy and have a nut-free household.

maybe a little salt & pepper....

you could turn it into a whole stirfry thing with other veggies.... it's related to cabbage and you can treat it as such... just a exotic cabbage It's widely used in Chinesse cooking and I'm sure you could get creative with recipes... omitting the soy sauce...

I can actually tolerate soy sauce in moderation... It's just tofu and soy milk that tend to make me sick...

We'll make *any* green into a 'main dish' by

saute onion with salt, pepper (and anything else you like such as cumin or crushed red pepper).

add washed/chopped greens, saute for a minute or so longer

add 1 can drained/rinsed beans (choose your favorite kind).

heat though.

serves 2 (or serve over rice to feed 4).





You can always just wash/chop it, saute it in a little oil, and freeze it for later use. - add to soups, stir-fry, veggie lasagna, stuffed shells, etc.

It is good 'plain' as a side dish, just sauted with a little oil, salt, pepper and whatever you like - we like hot pepper sauce, but garlic (or garlic oil) would also be lovely.

Great idea with the freezing too.... I think I might do that... I made an amazing pad thai dish and if I had them frozen, I could just throw them in the wok, heat, add noodles and sauce, and voila, dinner!

can you do liquid amino acids? Like Bragg's? It tastes like soy sauce but isn't It is soy based, but very different, less salt, total protein

My thought was stir fry

Braised bok choy is also yummy

I love bok choy.

It is really good steamed. We also fry it with garlic. Or add it to stir fries. Or soup.

Jamie Oliver had a recipe that I'm trying to remember off the top of my head. It was a beef & bok choy recipe, but we've done it veggie many times with just the bok choy. It was so yummy and spicy. He boiled the bok choy in salted water. I think he used garlic, ginger, red chilis, lime juice and olive oil as a sauce with the bok choy. He might have used soy sauce too, but it would taste good even without it. I probably would steam the bok choy rather then boil it, and then douse with the sauce.

My favourite has already been meantioned. I stir-fry it with sliced onions (sometimes minced garlic, too), I season it with Herbamare and then squirt on some Bragg's. And I thought I was original with my concoction.
