Last night was homemade pizza. Toppings were mozzarella, goat cheese, mushrooms, onions, and Italian sausage.
Dh is out of town all week. I tend to just forget about dinner when he's gone. Tonight I rummaged around in the fridge and kind of had a buffet of leftovers. Tomorrow I hope to make a Moroccan stew with chicken and rutabagas. And buttermilk rye rolls. |

Sure! I use this recipe.
For the miso-sesame dressing 1 tablespoon minced fresh ginger 1 small garlic clove, minced 2 tablespoons white miso (the mildest kind) 2 tablespoons tahini (other nut butters can work in a pinch) 1 tablespoon honey 1/4 cup rice vinegar 2 tablespoons toasted sesame oil 2 tablespoons olive oil It makes quite a bit so I halved the recipe and we still didn't finish it.

Oven-baked salmon (fresh from Aldi seasoned with olive oil, lemon, salt, pepper, oregano, garlic, onion powder, lemon pepper, and fresh dill), yellow rice, tzatziki sauce, asparagus from the garden, Greek salad. It truly was yummy and for me to say that about salmon, it must have been good!

We had chicken pot pie (triple batch so I could stash extra filling in the freezer for another day).
I also made stromboli to take with us for lunch during our field trip to the zoo tomorrow (to eat cold).

Last night was meatloaf. I made it like to top of the cabbage casserole because that is what early bird asked for.
Wiggle worm nearly started crying because there wasn't any cabbage with it. She then stomped off to the fridge and bulled out the cut broccoli and said that the broccoli would have to do as I had not given her any cabbage. We did Keto Brussels Sprouts Gratin for dinner tonight. So good! I also added some spinach to it, and I just do it all in the skillet, and don't bother with the oven part of it. Although I generally avoid dairy myself, I do eat this recipe with dairy in it Dh loves this and loves taking leftovers for work lunches.

I'm making Slow Cooker Spaghetti Bolognese today and I will serve a portion of it tonight with gf spaghetti, creamy crockpot corn, and a mixed green salad with a dijon vinaigrette. I will freeze three portions of the sauce for other days!
