We've been eating less meat lately. Yesterday I made coconut curry rice and served it with boiled eggs and cucumber salad. Very nice!
Rice dish was simple if you're comfortable playing with amounts of rice/liquid: Stir fry one chopped onion with 1-2 t each diced fresh garlic and ginger. I added a large diced carrot. Add 1 T curry powder and 1 t turmeric. Add 2 cups rice. with 1 c coconut milk plus enough water to cook rice (I measured the rice + liquid in my rice cookereven though I cooked this on the stove top). Add a 1-2 chicken bouillon cubes. Stir to mix, cover and cook until rice is done.

Special dinner for my parents' anniversary: romaine salad with feta and balsamic vinaigrette, roast beef, cream cheese mashed potatoes, gravy, green beans with bacon, and dd made strawberry shortcake for dessert.

Thanks! Not unhealthy just definitely not low fat! But it does sound like something my kids would LOVE! Plus I love how easy crock pot dishes are.

I need to get off the computer and throw together some pasta fagioli. Unfortunately I don't have any cooked ground beef in the freezer so I have to do EVERYTHING. But I'll double it and have soup to put in the freezer.

I made beef stroganoff tonight...hadn't made it in literally YEARS but was just so hungry for it. It was good...not amazing. But the boys loved it. And a chopped salad kit that really hit the spot.

Last night I made chicken breast stuffed with pesto, asparagus and tomatoes. With roasted broccoli and onions on the side. Super delicious!
